Muesli Made Easy

As you know Jeremy and I have been re-designing our lifestyle and looking at ways that we can start spending less, earning more, and eating better!

One thing I have been wanting to do for a long time is to reduce the amount of sugar loaded cereals that we eat in the morning and replace them with homemade muesli.

So the last time we were grocery shopping I grabbed 2kg of rolled oats, and two 750g bags of pre-mixed trail mix and decided to get cracking!

Making your own muesli is so easy and it has far less calories and sugar and oil than the stuff you get in a bag!

To start you pour the rolled oats into 3-4 baking dishes and trays and get the oven going on a medium heat.

Then you separate the fruit out from the nuts and seeds and scatter the nuts and seeds into the trays and keep the fruit aside in a bowl.

Next is to melt about 1/4 cup of honey in the microwave and pour this evenly over the trays of oats and nuts - and then  as my secret tip - add a teaspoon of vanilla essence to each tray too.

Then they get put in the oven for about 15min, stirring occasionally until the honey is evenly distributed and the oats  are softly browned and toasted.

Once cool you can mix in the dried fruit - and transfer it into air tight storage containers.

This time around I split the mixture into two and made a mixed fruit and nut blend... and an almond and seeds blend.

But you could also try toasting some coconut chips and tossing those in, and how about some cocao nibs for a chocolaty treat!

To take this homemade muesli to the next level you just need to mix it with some yoghurt, milk, grated apple, cinnamon, mixed spice, honey and apple juice and leave it in the fridge over night for some delicious bircher muesli.

Or try mixing it with some melted butter, brown sugar, flour and cinnamon and make a moorish topping for an apple crumble.

OMG I'm getting hungry just thinking about it!
